InSpiral are having a summer of tasty celebrations and it’s time for everyone to join in the fun! If you didn’t know already, the lovely people at inSpiral are residing in the Food Hall at Selfridges this May and June to show their support for the department store’s aspirational beauty project. The inSpiral team has created an exclusive array of heavenly recipes to celebrate the project and here is our favourite!
The Raw Sunshine Gazpacho Soup is a delicious organic delight that’s is absolutely perfect for summer foodies. Even if you’re missing your favourite warming, wintery soup, gazpacho is a tasty, refreshing alternative. The great thing about this snack is that you can alway interchange one vegetable for another, its a perfect this-is-whats-left-in-the fridge kind of snack. As long as your soup is packed full of fresh vegetables then you can do no wrong. A summer delight of goodliness, that’s what we like to call it!
1 cucumber, chopped into quarters
1 garlic clove, peeled
5 fresh basil leaves
3 sundried tomatoes
2 fresh tomatoes
1 celery stick, quartered
juice of 1 lemon
sprinkling of Himalayan salt
sprinkling black pepper
½ red onion, cut in half
small handful rocket leaves
1 tsp dried thyme
1 tsp dried oregano
water, filtered – amount to desired consistency
1/2 yellow pepper
1/2 red pepper
1/2 cup of alfalfa sprouts
1 tbsp hulled hemp seeds
Place all of the soup ingredients into your vitamix or blender and whiz to desired consistency and temperature.
If your blender is not so powerful then cut vegetables into smaller pieces.
Serve in bowls with the peppers, seeds and sprouts sprinkled on top.
